Ingredients
  

  • 4 medium sweet potatoes
  • 2 cups Garlic Herb Shredded Chicken
  • ¼ cup plain Greek yogurt optional
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Black pepper to taste
  • Optional: chopped green onions

Method
 

  1. Preheat oven to 400°F.
  2. Wash and pierce sweet potatoes with a fork.
  3. Place on a baking sheet and roast for 40–50 minutes, until tender.
  4. Warm shredded chicken if needed.
  5. Slice each sweet potato open and fluff the inside with a fork.
  6. Fill with shredded chicken.
  7. Top with olive oil, Greek yogurt (if using), and seasonings.
  8. Garnish with green onions if desired.
