Ingredients
  

  • 4 medium russet potatoes
  • 1 lb ground turkey
  • 1 can kidney beans rinsed/drained
  • 1 can diced tomatoes
  • 1 small onion diced
  • 2 cloves garlic
  • 1 –2 tbsp chili seasoning
  • Salt & pepper to taste

Method
 

  1. Bake or microwave potatoes until tender.
  2. In a skillet, cook ground turkey until browned.
  3. Add onion and garlic, cook until softened.
  4. Stir in beans, tomatoes, and seasoning. Simmer 10–15 minutes.
  5. Slice potatoes open and fluff insides.
  6. Spoon chili mixture over potatoes and serve.
