Ingredients
  

  • 3 cups prepared pulled pork
  • 3 cups cooked brown rice
  • 1 cup corn kernels
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 2 green onions sliced
  • 1 cup shredded lettuce or cabbage
Optional Sauce
  • 1/4 cup plain Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • Pinch of garlic powder

Method
 

  1. Prepare brown rice if not already cooked.
  2. Warm pulled pork in a skillet or saucepan over medium-low heat.
  3. Prep vegetables while pork heats.
  4. In a small bowl, whisk together Greek yogurt, lime juice, smoked paprika, and garlic powder if using the sauce.
  5. Divide brown rice between bowls.
Top with:
  1. pulled pork
  2. corn
  3. bell peppers
  4. tomatoes
  5. avocado
  6. lettuce or cabbage
  7. Drizzle with sauce and garnish with green onions.
