Method
- Pat the chicken dry with paper towels.
- Brush both sides with olive oil.
- Combine all seasonings in a small bowl.
- Sprinkle the seasoning mixture evenly over both sides of the chicken.
- Cook over medium heat on a grill, cast-iron skillet, or electric griddle for about 7-9 minutes per side, until the internal temperature reaches 165°F.
- Remove from the heat and let rest for 5 minutes before slicing.

- Chicken breasts of even thickness cook more evenly. Pound thicker portions if needed.
- Boneless chicken thighs can be substituted and remain especially juicy.
