Ingredients
  

  • 4 boneless skinless chicken breasts (about 1½ pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper optional or reduce to taste

Method
 

  1. Pat the chicken dry with paper towels.
  2. Brush both sides with olive oil.
  3. Combine all seasonings in a small bowl.
  4. Sprinkle the seasoning mixture evenly over both sides of the chicken.
  5. Cook over medium heat on a grill, cast-iron skillet, or electric griddle for about 7-9 minutes per side, until the internal temperature reaches 165°F.
  6. Remove from the heat and let rest for 5 minutes before slicing.

  • Chicken breasts of even thickness cook more evenly. Pound thicker portions if needed.
  • Boneless chicken thighs can be substituted and remain especially juicy.
