Ingredients

  • 2 pounds lean ground turkey 93% lean
  • 2 eggs
  • 1 cup Italian-seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tablespoons minced onion
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried
  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper optional
  • 2 tablespoons milk
  • Olive oil spray

Method

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper or lightly spray with cooking spray.
  3. Combine all ingredients in a large bowl. Mix gently until just combined. Overmixing can make turkey meatballs dense.
  4. Scoop into approximately 24 meatballs, about 2 tablespoons each.
  5. Arrange on prepared baking sheet, leaving a little space between each meatball.
  6. Lightly spray the tops with olive oil.
  7. Bake for 20-25 minutes, or until the internal temperature reaches 165°F.
  8. Serve immediately with your favorite marinara sauce over pasta, zucchini noodles, or roasted vegetables.

Tips
  • Slightly wet hands make rolling meatballs much easier.
  • Don't overmix the turkey mixture.
  • A cookie scoop helps keep every meatball the same size.
  • Ground turkey stays moist when cooked just to 165°F.
  • Fresh parsley adds brightness, but dried works well too.
