Ingredients
  

For the Bowls
  • 2 cups cooked rice
  • 2 cups precooked pulled pork
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 bell pepper thinly sliced
  • 2 green onions sliced
For the Sweet & Tangy Sauce
  • ¼ cup reduced-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger or ¼ teaspoon ground ginger
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Method
 

  1. In a small bowl, whisk together the soy sauce, honey, vinegar, sesame oil, garlic, ginger, cornstarch, and water.
  2. Heat a large skillet over medium heat.
  3. Add the broccoli, carrots, and bell pepper. Cook for 4–5 minutes until crisp-tender.
  4. Stir in the pulled pork and cook until heated through.
  5. Pour the sauce over the pork and vegetables, stirring until everything is evenly coated and the sauce thickens slightly.
  6. Divide the warm rice among four bowls.
  7. Spoon the pork and vegetable mixture over the rice.
  8. Garnish with green onions and any optional toppings before serving.
