All you need are a few basic ingredients (that you most likely already have on hand) to transform chicken thighs into an herby, garlicky dream. The best part? Your sides and main dish will both be ready in under an hour, making this an ideal last-minute, filling dinner. I paired this one-pan meal with roasted zucchini and asparagus, but you can switch it up with whatever is in season that you have on hand.

How To Make Greek Chicken

INGREDIENTS

  • Extra-Virgin Olive Oil: Use your favorite extra-virgin olive oil, or consult our list of the best (and worst!) olive oil brands.
  • Lemon Juice: Originally I suggested using the juice of a whole lemon, but some lemons are juicier than others. So, I found that 2 tablespoons gives the right amount of lemon flavor. Make sure to use freshly squeezed lemon juice.
  • Garlic: I wanted this dish to have plenty of garlic flavor, so I’m using 3 cloves of garlic here.
  • Oregano: Dried oregano adds a strong Greek-inspired flavor to this chicken, but if you want to use another dried herb, you can try that as well.
  • Chicken Thighs: This recipe can be made with either boneless skinless chicken thighs or bone-in, skin-on chicken thighs. I tend to favor skin-on chicken thighs because of the extra flavor the skin adds, but if you want to save a few grams of fat, this can easily be delicious with boneless skinless thighs. The cook time may vary by a couple of minutes.
  • Asparagus & Zucchini: While I love asparagus and zucchini in this dish, you can toss in any veg that roasts up nicely. Some good options are broccolini, Brussels sprouts or bell peppers.

Chipotle Shrimp Taco Bowls

Taco bowls are essentially a dream for meal prepping. This recipe formula works for countless variations, but I especially love this chipotle shrimp version. Not only is it delicious, but every component comes together quickly. After an easy adobo and honey marinade, it only takes the shrimp a fast 4-ish minutes to cook. The rice can be done while the shrimp is marinating, then all that’s left is prepping the toppings. It’s the perfect quick, easy, and versatile meal that you’ll have no problem enjoying all week long.

The toppings:
Your topping choices are endless, but I stuck with classics that you might find on a Chipotle burrito bowl, like corn salsa, beans, pico de gallo, and sour cream. The feta is for a bit of creaminess, plus the saltiness it also adds.

Storage & make ahead:
These can be made up to 5 days ahead. Keep the corn salsa and other toppings separate from the shrimp and rice so that you can easily reheat the shrimp and rice. Then you can pile your toppings on.

Pineapple-Glazed Ham Ingredients

  • Ham: Choose a bone-in ham for the best flavor. This recipe calls for a fully cooked ham, about 7 to 9 pounds. When determining how much ham per person, estimate approximately 3/4 to 1 pound ham per person.
  • Pineapple: For best results, use canned pineapple rather than fresh, as fresh pineapple can break down the meat, resulting in a mushy texture. For a thicker ham glaze, drain the canned pineapple before using it.
  • Brown sugar: Use either light or brown sugar for the glaze. The biggest difference between light and brown sugar is that the latter contains more molasses and will result in a darker glaze.
  • Dijon mustard: If you don’t have Dijon on hand, spicy brown mustard or even yellow mustard will do.
