Some may say that soup season is just fall or winter, but here at Delish, we celebrate all year long, especially in the spring. Think about it: Freak late-season snow storm? It’s soup time. Days that start at 65° and drop to 30°? Absolutely a soup day. Went a little hard at the farmers’ market (we get it, so many fresh veggies!) and have a fridge full of wilting greens? These 45 spring-y soup recipes more than got your back, and it’s time to get your fill. Before you know it, it’ll be summer, and you’ll want nothing to do with soup (except maybe gazpacho).

With easy breezy weather on the horizon, we decided to highlight those lighter flavors with our favorite spring produceCarrotsasparagus, and broccoli are all still or coming into season, so we’ve focused on them here. The last of the 10 plagues was the killing of all firstborn Egyptian sons, during which God instructed the Jewish people to slaughter a lamb and mark their doorposts with its blood to instruct the Angel of Death to “pass over” them. After this last plague, the Pharaoh ordered the Jews to leave Egypt. As the story goes, they packed in such a hurry that they didn’t have enough time to even let their bread rise (if you’ve ever made homemade bread, you can imagine), and only were able to bring unleavened, cracker-like bread called matzo with them.

50 Fresh Salads To Help You Welcome Spring

Real talk: Is there anything better than spring produce? We think not. Now that we’re shaking off that winter chill, we’re so ready to spring forward… right into these salads. ‘Tis the season when fruits and vegetables start being at their peak, so definitely take advantage with these recipes for spring-y salads like our strawberry spinach saladspring Cobb salad, and tzatziki potato salad. These 50 fresh and exciting salad recipes also work well as side dishes or the main event too.

There will always be room at our table for the uncomplicated classics, particularly when we’re serving a more involved main dish. Arugulaspinach, and kale salads with bright and easy vinaigrettes can be so lovely in their simplicity. That said, our hearts really belong to the FULL salads, the kind that can stand alone as a meal and has tons of texture and flavor. Here, we’re filling or topping our salads with everything from fried halloumi to sweet spring strawberries on a spinach salad. Feel free to get creative and add your favorites too; we’re pretty partial to our roasted cauliflower salad and our beyond gorgeous super-green pasta salad.

Also, we’d be remiss if we only focused on the greens here. Macaroni salad is always a summer crowd-pleaser, but for spring, we like to go outside the box and try out different “pasta” shapes, like the orrechiette in our bruschetta pasta salad, the ramen in our crunchy Mandarin orange chicken salad, and the papaya in our green papaya salad. And they’re not all mayo-based! We think spring is a great time to focus on bright, vibrant flavors, so we’ve relied on vinegars and citrus to add some brightness to our salads.

We’ve also got a couple warm options for those cold spring nights when the temperature unexpectedly drops, like our lentil salad or Tuscan tortellini salad. The best part? They make for great cold leftovers the next day too.

Cabbage Soup

Whether or not you’re a fan of cabbage like me, you’re sure to love this hearty cabbage soup. Cabbage is perfect in soup recipes because it’s affordable and accessible year round, and a little always goes a long way. It’s the star in this slow-cooker soup, where you’ll use a whole head of cabbage and other vegetables like carrots, onion and celery.

Cabbage is such a versatile ingredient with tons of nutritional value. It’s full of fiber, vitamin C and vitamin K, is antioxidant-rich, and has zero fat and few calories per serving. It can be prepared raw, cooked or fermented. Whatever variety you use—green, savoy or napa—cooked cabbage gets soft and sweet, especially when simmered in a soup.

Our cabbage soup is also loaded with beans, making it flavorful, protein-packed and filling. Best of all, once you start your slow cooker, you don’t have to think about it again until it’s time to set the table.

Cabbage Soup Ingredients

  • Cabbage: Green cabbage is best for this recipe for its texture and sweetness when cooked. It’s easy to shred cabbage by hand, but you could buy a bag of pre-shredded cabbage or use napa or savory cabbage in a pinch.
  • Chicken stock: Chicken stock and broth are pretty interchangeable. The main difference is that you use bones for stock, which is cooked much longer and tends to be a little more flavorful and thicker. Use one of our recommended store-bought chicken broth brands for a quick soup, or try our homemade chicken stock.
  • Tomato paste: Tomato paste adds a depth of flavor and a nice color to this soup. It’s also full of umami!
  • Celery: Celery is a vital aromatic that adds flavor and texture to this cabbage soup.
  • Carrots: Carrots are essential for mirepoix, the mixture of small diced carrots, onion and celery that forms the base of many soups, sauces and stews.
  • Onion: There are many types of onions, but we like yellow onions for this soup because they’re mild and not too sweet.
  • Beans: Our recipe uses a can of great northern beans, but if you’re into cooking dried beans, use those instead.
  • Garlic: I rarely make a soup without garlic, as it’s such a flavorful ingredient! I always use fresh chopped garlic if possible.
  • Seasonings: Dried thyme and bay leaf bring a lot of flavor to this cabbage soup.
  • Parmesan cheese: This soup tastes fantastic topped with a heap of shredded Parmesan cheese. I love fresh grated Parmesan, but pre-shredded works as well. If you have a Parmesan cheese rind, pop it in the soup while it simmers!

Easter Pie is a rich, meat-and-cheese-filled Italian dish traditionally served on Easter. HOW TO MAKE EASTER PIE

Our Easter Pie recipe uses a few shortcuts to deliver the classic flavors of the original with much less time and effort. Here’s a peek at how we make it. You can see the full list of ingredients and instructions below.

Mix the Filling

To make the base of this recipe, mix eggs and cheeses.

While traditional Italian Easter Pie uses a type of cheese called basket cheese in addition to the ricotta and other cheeses, we skipped that ingredient as it can be difficult to find unless you’re close to an Italian grocery store just before Easter. We prefer whole milk ricotta for its luxurious texture, and we chose the easy bagged blend of shredded mozzarella and provolone cheeses for simplicity. You can decide whether to grate your own Parmesan cheese or opt for the pre-grated Parmesan cheese in the shaker container. (We don’t think anyone will know the difference.)

Add the Meats

Stir the meats into the egg and cheese mixture.

An authentic Easter meat pie calls for diced Italian deli meats, but sliced versions of salami, prosciutto, and pepperoni are readily available in most grocery stores. We’re calling for those and chopping them up for this simplified recipe.
