If you’re like me, you know it isn’t always easy to find the time and effort to make and eat three full meals a day, choosing instead to snack when possible and settle for one or two real meals; so it is especially important that the meals we do eat are full of all the good stuff we need to stay up and running. Carrot Hummus

Wanna put a little spring in your snack? Make carrot hummus. Roasted carrots are whipped with harissa, tahini, and chickpeas for a creamy orangey dip that celebrates everyone’s favorite spring veggie.

Cooking the chickpeas:
Boiling the chickpeas in an alkaline solution (made with the combination of baking soda and water) softens the chickpea skins, which helps them break down better once blended and results in a creamier hummus. Don’t worry: The hummus won’t taste like baking soda. Once they’re drained, rinsed, and blended with everything else, you’ll never know the baking soda was there.

Roasting the carrots:
Roasting carrots is a great way to concentrate their natural sweetness and eliminate excess moisture that might water down the hummus. Depending on the color of the baking sheet, the carrots might brown quite a bit on the side that’s flat against the baking sheet. While that browning signals tons of flavor, I recommend trimming off the most excessively browned bits; otherwise, you’ll most likely have brown flecks in your hummus.

Storage:
Carrot hummus can be made 3 days ahead. Store in an airtight container and refrigerate.

I Tried 5 Honey Mustards, and the Winner Was So Good I Ate It Straight off the Spoon

I’ve been a mustard fan my whole life. Even at a young age when everyone I knew was smitten with ketchup, I was reaching for a bottle of the tangy yellow stuff. I know it’s not a condiment for every occasion, but it’s the condiment I find myself using most often.

While Dijon and stone-ground mustards are my favorites, I have a soft spot in my heart (and belly) for a good honey mustard. It’s the unsung hero in the mustard world, and I wanted to determine which brand made the best. To find the winner, I tested five store-bought honey mustard brands to see which one had the best flavor and texture and ranked my findings.

How I Chose the Honey Mustard Brands 


Because I wanted to make sure that the honey mustard brands I tested were widely available, I put on my coat, got in my car, and went to several local grocery stores. I hit the condiment aisles and scooped every honey mustard they had. It turns out, there were only five brands total, which you’ll see tested below.

Easy Chocolate Eclair Cake

Where the classic French eclair is finicky and high-level, the eclair cake takes a much more simplistic approach, with all the same great flavors and one-third of the time. This cake uses graham-cracker cake layers to mimics the pate a choux from traditional eclairs, and replaces the pastry cream filling with instant vanilla pudding. It’s not a chocolate eclair—or even a cake, for that matter—without chocolate frosting on top, so we keep things easy and use a store-bought chocolate frosting (but feel free to make yours from scratch). Eclair cake is creamy and decadent with a luxuriously chocolatey bite, just like any good chocolate eclair should be.

Eclair Cake Ingredients

  • Whole milk: Rich and creamy whole milk hydrates the instant vanilla pudding mix, turning it into a luscious custard.
  • Instant pudding mix: We forgo the usual homemade pastry cream in favor of easy and just-as-yummy instant vanilla pudding. Make sure the packaged mixes say “instant” and not “cook and serve.”
  • Frozen whipped topping: Buy a frozen whipped topping (like Cool Whip) and thaw it before using in this eclair cake recipe.
  • Graham crackers: No need to make a tricky pate a choux here! Graham crackers act as the easy, bready base for our chocolate eclair cake.
  • Chocolate frosting: This eclair cake is finished with chocolate frosting. You can use homemade chocolate frosting, but feel free to keep this recipe easy by using the best store-bought chocolate frosting.
