Macaroni salad is a go-to, classic side I look forward to at every summer get-together. It’s simple to throw together and, when done right, is a creamy, bright addition to any party, potluck, or picnic spread. Done wrong, though? Bland, soggy, or dry mac salad is SUCH a disappointment. To get perfect mac salad every time, ditch the store-bought and make my guaranteed showstopper recipe instead. Read on for some things to know to make it the best it can be, every time:

  • Pasta: Elbow is classic here—this is mac salad after all. That being said, you can use your favorite short pasta shape if you don’t have elbow.
  • Olive Oil: A little bit of olive oil drizzled over the pasta prevents the noodles from sticking together; it’s a step you don’t want to skip!
  • Mayo: Mayo is essential here, but you want to be careful with the amount. Add more than what I call for here, and you risk ending up with a goopy mess.
  • Lemon Juice: The key to a glossy mac salad? Having a good amount of acid, in the form of lemon juice here, to loosen up the dressing.
  • Sugar: A little bit of sugar won’t make this salad sweet, but it will tie all of our flavors together, and add a hint of sweetness that makes mac salad complete.
  • Mix-Ins: Every element selected in this salad brings something to the table to make a great composition. The celery brings freshness, tomatoes offer sweet umami explosions, and Kalamata olives give you that brine and fruitiness that makes your mouth water. Don’t skip these!

July 4th Ice Cream Cake

This festive ice cream cake is more impressive than any fireworks display you’ll see this year! Vanilla ice cream dotted with red, white, and blue sprinkles is sandwiched between two layers of soft and fluffy vanilla cake, and the whole thing is topped with whipped cream frosting (like the patriotic ice cream sundae of your dreams). Ice cream cake, we salute you!

Give yourself plenty of time (think 2 or 3 days) to make this cake because you’ll need to return it to the freezer several times to set between assembling and decorating steps. Be sure you have a large, easily accessible space cleared out in your freezer before you get started. 

We recommend using store-bought ice cream, as those brands tend to contain stabilizers that will be your best friend as you build this cake. Speaking of stabilizers, we’ve opted to make a gelatin-stabilized whipped cream frosting for this cake to give it a little longevity and to make it easier to work with.

Philly Cheesesteak Dip

My in-laws hosted a “Dips-mas Eve” last holiday season, where each household prepared a dip. A variety of crowd-pleasing dips—hot, cold, savory and sweet dips—all went head-to-head in a friendly family dip throwdown. My fiance and I take food challenges quite seriously, so after much consideration, we decided our contribution would be a Philly cheesesteak dip.

I come from a long line of born-and-bred Philadelphians, so my family loves cheesesteaks. To make a dip that tasted like an authentic Philly cheesesteak, I knew I had to choose the right meat. I went with thinly shaved ribeye steak. Cooked with chopped onions and green bell peppers, then mixed into a creamy base with pantry seasonings and lots of provolone, the quality of the meat really made a difference.

The dip baked until it was perfectly bubbly and golden brown. It was a smash hit with our family, who lovingly coined it “Philly Philly” after the Philadelphia Eagles’ infamous trick play. The creamy, meaty dip was great on the holiday appetizer table, but it’s also an excellent choice to pair with dippers as a Super Bowl food idea (especially when the Eagles make it to the big game!).

Ingredients for Philly Cheesesteak Dip

  • Shaved beef ribeye: Like an actual cheesesteak, this dip is only as good as the type of steak used, and thinly shaved ribeye is the best choice for cheesesteak recipes. Look for 1-pound packages of shaved ribeye in the meat section. Better yet, visit the meat counter or a butcher and have them cut a fresh steak—ask for it shaved so it’ll be ultra-thin.
  • Creamy base: Cream cheese, sour cream and mayonnaise form the creamy base of our dip. This trifecta creates an unbeatable balance of tanginess and richness. Be sure to soften the cream cheese so it will mix easily.
  • Worcestershire sauce: A teaspoon of Worcestershire sauce enhances the dip’s savory, meaty flavor.
  • Seasonings: Garlic powder, dried parsley flakes, salt and pepper season the dip. You can substitute two garlic cloves and 1 tablespoon of fresh chopped parsley if you have fresh ingredients on hand.
  • Provolone cheese: Provolone is a classic choice for cheesesteaks and an excellent melting cheese—perfect for baked hot dip recipes. Look for an 8-ounce package of mild sliced provolone containing 12 slices. You can also chop a block of provolone into small cubes.
  • Onion: Traditional Philly cheesesteaks feature melt-in-your-mouth onions cooked alongside the steak. Yellow onion adds sweetness and depth of flavor that complements the meatiness and cream-based ingredients.
  • Green bell pepper: Some people love bell peppers on a cheesesteak, and others never order ’em. I like them, so this recipe for Philly cheesesteak dip includes chopped green bell pepper for extra flavor and texture.
  • Dippables for serving: Serve this dip with your favorite dippers. Chewy baguette, crisp crostini, tortilla chips, corn chips, crackers and veggies are all excellent for scooping up dips.

Tortellini Pasta Salad

Pasta salad is one of my quintessential summer staples. It’s filling, full of textural variety, and extremely make-ahead-friendly — all vital parts of a delicious, lazy meal when the temperature starts to climb. And while there are certainly wrong pasta shapes to use, we aren’t talking enough about the best possible shape: tortellini.

When you make tortellini pasta salad, you are guaranteed one extremely important thing: cheese in every bite. Between the fresh mozzarella and the cheese-filled pasta, you’re not getting a single forkful without cheese, and that’s a really beautiful thing. You can dress pasta salad in plenty of ways, but this might just be my favorite. Mix store-bought pesto with pepperoncini pepper brine for a dressing that is well-rounded, tangy, and full of flavor without any of the fuss.

Honey Gold Sauce

If you’ve ever been to Memphis and ordered wings, chances are you’ve come across honey gold sauce. This sauce is a local staple — especially at wing joints, where it’s tossed with crispy fried chicken wings or used as a dip on the side. It’s tangy, sweet, and a little spicy, and has that perfect sticky texture that clings to everything in the best way.

Honey gold is sometimes confused with Carolina gold, but there are a couple of differences. Carolina gold is a mustard-based barbecue sauce from South Carolina, made with vinegar and mustard, and traditionally served with pulled pork. Honey gold is also within honey mustard territory, but it’s thicker, sweeter, and spicier, and more of a wing sauce (although it can definitely pull double duty!).

Pickle-Brined Chicken

I am a firm believer in the pickle theory, which is the idea that a relationship can only be harmonious when there is one person who loves pickles and another who doesn’t. I must admit that I’m not the biggest fan of pickles, but my husband will happily take them off my plate. And I kid you not, my five-year-old loves pickles so much, he claims that pickle juice is his favorite beverage (we let him drink some pickle juice once). Sometimes he even requests that we refer to him as “Pickle.”

So when I learned about pickle-brined chicken, I knew my family would love it. Plus, it gave me something to do with all those jars of leftover pickle juice that have been accumulating in our fridge. I’m also happy to report that for those who don’t love pickles, brining your meat in pickle juice does make it taste overwhelmingly like pickles (though the longer you brine the chicken, the more pronounced the flavor will be). Instead, while it does lend a subtle pickle flavor to the chicken, the pickle brine mostly keeps the cooked chicken tender and juicy—and what’s not to love about that?

Ingredients for Pickle-Brined Chicken

  • Chicken breasts: This recipe calls for 6-ounce boneless, skinless chicken breasts. Boneless chicken is perfect for quick-cooking on the stovetop.
  • Pickle brine: This is the perfect recipe for using up that leftover pickle brine you always feel guilty about throwing away (or is that just me?). If you bought the jumbo jar of pickles and still have leftovers after making this stovetop chicken recipe, there are several other ways to use leftover pickle brine, and other pickle recipes for the leftover crunchy cucumbers.
  • Seasoned flour: Flour seasoned with garlic powder, onion powder, paprika, salt, pepper and cayenne pepper makes a flavor-packed coating for the chicken. The coating adds flavor and texture to the chicken and also helps to seal in moisture as it cooks.
  • Olive oil: This flavorful cooking oil prevents the chicken from sticking to the pan as it cooks. Save the extra-virgin olive oil for dipping and dressings; regular olive oil is your best bet for cooking.
  • Butter: The butter adds rich flavor to the chicken, and when you combine it with olive oil, there’s less of a chance it will burn as the chicken cooks.
