  • Potatoes: There’s no need to peel the potatoes if you don’t want to; this will also cut down on prep time.
  • Carrots: Carrots add a nice sweetness to this soup.
  • Onions: Be sure to give the onion enough cooking time to soften (at least 10 to 15 minutes).
  • Butter: When combined with flour and milk, the butter in this soup forms a paste that thickens the liquid and makes it taste richer and more flavorful.
  • Flour: Flour acts as a thickening agent here, giving the soup its thick, creamy texture.
  • Milk: For this recipe, 2% milk is ideal. The texture of the soup won’t be as thick otherwise.
  • Cheddar cheese: Sharp cheddar cheese is best; add a little bit at a time, and let it melt before adding more.
  • Ham: Feel free to use pre-cooked cubed ham to save on time.

Copycat Dairy Queen Ice Cream Cake

In the hot summer months, traditional cake—no matter how moist and fluffy—can sometimes feel too heavy for dessert. The solution? An ice cream cake. This cool, layered dessert looks and cuts like a cake, but tastes like the ice cream dessert of our dreams.

You’ve likely indulged in a piece or two of Dairy Queen’s famous ice cream cake over the years. While those cakes are still available at DQ, believe it or not, you can DIY a better ice cream cake at home. This copycat Dairy Queen ice cream cake recipe is made with chocolate and vanilla ice cream, chocolate ganache and a thick layer of chocolate cookie crumbles—just like the original.

Ingredients for Ice Cream Cake

Chocolate cookie crunch

  • Oreos: To make Oreo crumbs, first remove the filling. Pulse the cookies in a food processor until they’re very fine. Or, close them in a zip-top bag and whack the cookies with a rolling pin until they’ve become crumbs.
  • Butter: Heat the butter in the microwave or a saucepan just until it’s melted.
  • Chocolate hard-shell ice cream topping: Make homemade Magic Shell in your kitchen, or buy a bottle from the store.

Chocolate ganache

  • Heavy whipping cream: Cream will thin out the chocolate as it melts, creating a smooth, silky ganache.
  • Chocolate chips: Chocolate ganache is only as good as the quality of the chocolate you use. Buy a bag of the best chocolate chips or finely chop up a high-quality chocolate bar.
  • Light corn syrup: Corn syrup will create give the ganache a nice sheen while also slightly sweetening it. Be sure you’re using light, not dark, corn syrup.

Ice cream layers

  • Vanilla ice cream: The two ice cream layers are huge flavor components in this ice cream cake. Splurge on the best vanilla ice cream from the store, or go the extra mile and use homemade vanilla ice cream. Whether store-bought or homemade, I recommend leaning towards an ice cream with flecks of vanilla bean for the best flavor.
  • Chocolate ice cream: Just like the vanilla ice cream, reach for a few pints of one of the best chocolate ice cream brands from the store. Or, dust off the ice cream maker and churn your own homemade chocolate ice cream.

Whipped cream

  • Heavy whipping cream: Heavy whipping cream’s fat content allows it to fluff up into stable whipped cream. Avoid using whole milk or buttermilk in its place.
  • Confectioners’ sugar: A little confectioners’ sugar sweetens the whipped cream.

Chinese Coleslaw

Chinese coleslaw may not be traditional, but our recipe gives a slight nod to Chinese pickled cabbage and other salad-like dishes. The main ingredient is crisp, mild-flavored and slightly sweet napa or Chinese cabbage, which is more tender than typical green cabbage. The large, oblong-shaped heads feature tightly packed, crinkly, ruffled, pale green leaves on thick, wide, white stems. The inner leaves are a pale yellow.

When tossed with shredded carrots, water chestnuts, green onions, and a sweet and vinegary dressing that’s punched up with ginger, soy sauce and sesame oil, Chinese coleslaw is a perfect complement to burgers or barbecue ribs. Along with a swipe of Sriracha mayo, it makes a perfect topper on fried chicken sandwiches.

Ingredients for Chinese Coleslaw

  • Cabbage: Look for a heavy, solid head of napa cabbage with unblemished leaves. (Be careful; bok choy is also sometimes referred to as Chinese cabbage.) Shredded or chopped green cabbage also works in a pinch.
  • Carrots: Shredded carrots add a pop of color and some sweetness to the coleslaw.
  • Green onions: We cut green onions into 1-inch batons for more texture. They have a peppery, oniony flavor and provide color. Smaller, slender green onions are sweeter and more delicate than larger ones.
  • Water chestnuts: Canned sliced water chestnuts provide a nice crunchy texture to the filling. Fresh water chestnuts—if you’re lucky enough to find them at your local Asian market—are sweet and nutty and worth the extra work of cleaning them. If you can’t find water chestnuts, jicama is a good substitute. You can also use Asian pears or apples in a pinch.
  • Sesame seeds: Toasting brings out the nutty flavor and crunchiness of sesame seeds. If you buy them raw, toast them in a dry skillet over medium heat, stirring occasionally, until they’re golden and fragrant. Watch them carefully, as they can turn from golden to burnt very quickly. You’ll get a better bang for your buck by buying bags or canisters of sesame seeds at an Asian market. You can even find them pre-toasted. Storing sesame seeds in the freezer will help prevent them from turning rancid.
  • Dressing: This sweet and tangy dressing includes regular players like vegetable oil, sugar, salt, pepper and white wine vinegar. Asian flavors come from ground ginger, soy sauce and toasted (or roasted) sesame oil, which brings a rich, nutty fragrance. We like to use reduced-sodium soy sauce to keep the salt content in check.
  • Cilantro: Minced cilantro adds a fresh, herbaceous flavor to the dressing. The tender stems are full of flavor—give them a rough chop and add them to the salad for pops of brightness. If you’re not a cilantro fan, feel free to skip it.

Burger Bowls

Craving a juicy cheeseburger but not the mandatory nap that comes with it? This cheesy, saucy, veggie-packed burger bowl is your solution. To make this easy bowl, I skip the carb-coma-inducing potato bun and swap it for a bed of fresh romaine lettuce topped with everything you’d find on a classic American diner cheeseburger—tangy dill pickles, thinly sliced red onion, juicy tomatoes, smoky bacon, cheddar cheesy ground beef, a drizzle of burger sauce, and of course a few golden crispy fries. These bowls are just as versatile as an actual burger, meaning the sky is truly the limit when it comes to toppings. You can mix and match just like you would for your favorite take out burger meal. Keep reading for tips on how to swap out each ingredient.

Ground beef – Instead of the classic burger meat, try ground turkey, ground chicken, or even your favorite plant-based meat.

Cheddar cheese – Almost any of your favorite cheeses will work here. Try a spicy pepper Jack, crumbled blue cheese, nutty shredded Swiss, or even a slice of classic American. Stick with softer cheeses to make sure you get all of the melty goodness you deserve.

Bacon – I love the added smokiness and meatiness from bacon, but feel free switch it up with chopped pancetta, crumbled chorizo, or even sautéed mushrooms.

Romaine Lettuce – Just like with any bowl, you can get a whole new meal by simply switching up the base. Try peppery arugula, chopped kale, or even shredded cabbage for the base of your burger bowl.

Red Onion – I left these raw for extra texture and oniony bite, but you can swap these with caramelized yellow onion, scallions, or shallots for a more mild onion flavor.

Dill Pickles – Pickles are all about the briny tang so you can really experiment here. Of course there are bread and butter pickles, but you can also try pickled jalapeños for extra heat or pickled onions for a little extra sweetness.

French Fries – Use your favorite freezer-aisle crispy starch! Tots, sweet potato fries, or even onion rings would be a genius swap.
