20 High-Fiber Recipes To Help You Stay Fuller For Longer

If you’re like me, you know it isn’t always easy to find the time and effort to make and eat three full meals a day, choosing instead to snack when possible and settle for one or two real meals; so it is especially important that the meals we do eat are full of all the good stuff we need to stay up and running. While the “good stuff” can mean many different things to each person—healthy eating trendshigh-protein mealslow-calorie recipes, plant-based eating, and more—here I’m talking about fiber. Fiber brings a lot to the table when it comes to digestion help. It helps slow digestion, keeping you fuller for longer, while also regulating blood-sugar, cholesterol, and bowel movements. All good things! And don’t worry, as these 20 high-fiber meals show, fiber is very easy, and enjoyable, to add to your diet.

Fiber naturally occurs in plant-based foods, so fruits & vegetablesbeans, legumes, whole grains, and nuts are all safe bets to contain at least a little bit of fiber. As a general rule, crucifers—the plant family that contains everything from kale and Brussels sprouts, to broccoli and cauliflower—are especially good sources of fiber. Similarly, beans, legumes, and whole grains are generally high in fiber. Pick your favorite bean—chickpeas, pinto, white beans, black beans—they’re all full of fiber! Carrot Hummus

Wanna put a little spring in your snack? Make carrot hummus. Roasted carrots are whipped with harissa, tahini, and chickpeas for a creamy orangey dip that celebrates everyone’s favorite spring veggie.

Cooking the chickpeas:
Boiling the chickpeas in an alkaline solution (made with the combination of baking soda and water) softens the chickpea skins, which helps them break down better once blended and results in a creamier hummus. Don’t worry: The hummus won’t taste like baking soda. Once they’re drained, rinsed, and blended with everything else, you’ll never know the baking soda was there.

Roasting the carrots:
Roasting carrots is a great way to concentrate their natural sweetness and eliminate excess moisture that might water down the hummus. Depending on the color of the baking sheet, the carrots might brown quite a bit on the side that’s flat against the baking sheet. While that browning signals tons of flavor, I recommend trimming off the most excessively browned bits; otherwise, you’ll most likely have brown flecks in your hummus.

Storage:
Carrot hummus can be made 3 days ahead. Store in an airtight container and refrigerate.

All you need are a few basic ingredients (that you most likely already have on hand) to transform chicken thighs into an herby, garlicky dream. The best part? Your sides and main dish will both be ready in under an hour, making this an ideal last-minute, filling dinner. I paired this one-pan meal with roasted zucchini and asparagus, but you can switch it up with whatever is in season that you have on hand.

How To Make Greek Chicken

INGREDIENTS

  • Extra-Virgin Olive Oil: Use your favorite extra-virgin olive oil, or consult our list of the best (and worst!) olive oil brands.
  • Lemon Juice: Originally I suggested using the juice of a whole lemon, but some lemons are juicier than others. So, I found that 2 tablespoons gives the right amount of lemon flavor. Make sure to use freshly squeezed lemon juice.
  • Garlic: I wanted this dish to have plenty of garlic flavor, so I’m using 3 cloves of garlic here.
  • Oregano: Dried oregano adds a strong Greek-inspired flavor to this chicken, but if you want to use another dried herb, you can try that as well.
  • Chicken Thighs: This recipe can be made with either boneless skinless chicken thighs or bone-in, skin-on chicken thighs. I tend to favor skin-on chicken thighs because of the extra flavor the skin adds, but if you want to save a few grams of fat, this can easily be delicious with boneless skinless thighs. The cook time may vary by a couple of minutes.
  • Asparagus & Zucchini: While I love asparagus and zucchini in this dish, you can toss in any veg that roasts up nicely. Some good options are broccolini, Brussels sprouts or bell peppers.

Coconut Shrimp Burgers

A hot, crispy platter of coconut shrimp is easily in my top 5 favorite appetizers, so naturally, I jumped at the chance to turn it into a burger. To make this unforgettable app-turned-entrée, ground shrimp are spiked with garlic, ginger, and scallions, then coated with coconut flakes. They’re deep-fried until golden brown, creating a giant, flavor-packed version of the OG. The crispy patties are layered onto a toasted potato bun, topped with cabbage slaw, and smothered in spicy-sweet chili mayo to mimic the flavor of the dip that usually tags along with coconut shrimp.

Since this has the veggies already built in, all you need is a quick starchy side to get a complete meal on the table in less than an hour. I’m a bit potato biased when it comes to burger sides, so I think this would be best with our oven-baked fries or a smattering of smashed potatoes.

A classic nostalgic comfort dish, goulash is the hearty weeknight dinner I’ll always crave. The best thing about this goulash recipe? Everything cooks together in one pot—even the pasta! Cooking the macaroni directly in the goulash means the pasta gets to soak up all that beef and tomato flavor while simultaneously releasing some of its starch into the pan, thickening the goulash to create a hearty, comforting stew. How To Make Goulash

INGREDIENTS

  • Ground Beef: If you’re steering clear of ground beef, you can use ground turkeyground chicken, or ground pork instead. The cooking time might change slightly when you’re browning the meat, but as long as you keep an eye on it, you should be fine.
  • Tomatoes: It might seem excessive, but there’s a reason for every different type of tomato in this recipe. The concentrated tomato paste adds rich umami, while the sauce gives the dish body. Those diced tomatoes? They’re there to give you little bursts of tomato-ey goodness in every bite.
  • Beef Broth: The beef broth combines with the 3 types of tomatoes to cook our pasta, and create the sauce.
  • Seasonings: Italian seasoning and paprika are my chosen seasonings here. Oregano was my original choice, but I found that Italian seasoning adds more of my preferred flavor.
  • Pasta: I went with elbow macaroni for the classic look, but any short pasta shape will work, including penne, rotini, cavatappi, or farfalle. Just keep in mind that these different pasta shapes might have different cooking times, so check the box they come in for the manufacturer’s recommendations and taste as you go to ensure your pasta is perfectly al dente.
  • Cheese: A cup of cheddar cheese melted in at the end seals the deal on the entire meal—I highly recommend not skipping this step.
