Preheat oven to 400°F.
Wash and dry sweet potatoes. Pierce each several times with a fork.
Place potatoes on a baking sheet and bake for 40–50 minutes, or until fork tender.
While potatoes bake, combine pulled pork, BBQ sauce, smoked paprika, and black pepper in a saucepan.
Heat over medium-low heat until warmed through.
Slice open baked sweet potatoes and fluff the inside with a fork.
Fill each potato with pulled pork mixture.
Top with shredded cabbage, green onions, and a spoonful of Greek yogurt if desired.
