Ingredients
  

  • 4 medium sweet potatoes
  • 3 cups prepared pulled pork
  • 1/3 cup no-sugar-added BBQ sauce
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 cup shredded cabbage or coleslaw mix
  • 2 green onions sliced
  • plain Greek yogurt for topping Optional

Method
 

  1. Preheat oven to 400°F.
  2. Wash and dry sweet potatoes. Pierce each several times with a fork.
  3. Place potatoes on a baking sheet and bake for 40–50 minutes, or until fork tender.
  4. While potatoes bake, combine pulled pork, BBQ sauce, smoked paprika, and black pepper in a saucepan.
  5. Heat over medium-low heat until warmed through.
  6. Slice open baked sweet potatoes and fluff the inside with a fork.
  7. Fill each potato with pulled pork mixture.
  8. Top with shredded cabbage, green onions, and a spoonful of Greek yogurt if desired.
