Ingredients
  

  • 1 pound smoked sausage sliced into ¼-inch rounds
  • 2 pounds baby potatoes halved or quartered
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • cups shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Heat a large cast-iron skillet over medium heat on a camp stove, grill, or campfire grate.
  2. Add the olive oil and potatoes. Cook for 15–18 minutes, stirring occasionally, until the potatoes begin to soften and brown.
  3. Add the onion and bell pepper. Cook for 4–5 minutes until softened.
  4. Stir in the garlic, smoked paprika, black pepper, oregano, and salt.
  5. Add the sliced smoked sausage and cook for 5–7 minutes until heated through and lightly browned.
  6. Reduce heat to low and sprinkle the cheddar cheese evenly over the skillet.
  7. Cover the skillet with a lid or aluminum foil and cook for 2–3 minutes until the cheese is melted.
  8. Remove from heat and garnish with chopped parsley.
  9. Serve hot.
