🛒 Ingredients
- 1 lb fresh salmon (skin removed)
- 1/3 cup whole wheat breadcrumbs
- 1 egg
- 2 tbsp plain Greek yogurt
- 1 tsp Dijon mustard

- 1 tbsp lemon juice

- Finely chop the raw salmon with a knife, or pulse a few times in a food processor until finely minced (not pureed).

Don’t panic if your salmon mixture seems a little loose. My solution to that problem tonight was to first cover the bowl and pop it into the freezer for 30 minutes. Then, I took it out of the freezer and weighed it. Make sure you put some parchment paper on the scale. Once you know how much the entire recipe weighs, you can calculate how much a single serving will weigh. Once I had the recipe separated out, I placed it on a small cookie sheet covered with parchment paper. Back into the freezer for another 30 minutes. This helped the patties hold their shape as I then placed them in the air fryer! Let me know if you try this trick.
