This festive ice cream cake is more impressive than any fireworks display you’ll see this year! Vanilla ice cream dotted with red, white, and blue sprinkles is sandwiched between two layers of soft and fluffy vanilla cake, and the whole thing is topped with whipped cream frosting (like the patriotic ice cream sundae of your dreams). Ice cream cake, we salute you!
Give yourself plenty of time (think 2 or 3 days) to make this cake because you’ll need to return it to the freezer several times to set between assembling and decorating steps. Be sure you have a large, easily accessible space cleared out in your freezer before you get started.
We recommend using store-bought ice cream, as those brands tend to contain stabilizers that will be your best friend as you build this cake. Speaking of stabilizers, we’ve opted to make a gelatin-stabilized whipped cream frosting for this cake to give it a little longevity and to make it easier to work with.
