But after a while, this routine gets a bit (OK, very) boring. That’s where the wonderful world of marinades comes in. Not only does a marinade impart the pork with plenty of flavor, but it also tenderizes the meat, ensuring that each bite is juicy and tender. These Greek pork chops get their bright, lemony flavor from a generous soak in a Mediterranean-inspired marinade of olive oil, citrus, spices and Greek oregano.
Greek Pork Chops Ingredients
Pork loin chops: Pork chops are a tender, juicy cut of pork. This recipe calls for boneless pork loin chops, commonly called top loin chops. For even grilling, look for pork chops that are all 3/4-inch thick and weigh about 4 ounces each. Don’t confuse pork loin chops with pork loin. Although they come from the same cut of pork, pork loin refers to the long, thick and wide cut of pork commonly used for roasting. Pork chops are steaks cut from the pork loin.

When soup season hits our house, we have a steady list of recipes on rotation. We love all the classic homemade soup recipes because they’re affordable and easy to make in bulk, and they can use up those vegetables in your crisper! This Test Kitchen-approved navy bean soup is one of our favorites, and you might even already have all the ingredients on hand.
Soaking beans overnight is recommended when cooking dried beans, which this recipe calls for. Though it means having to plan ahead just a bit, you’ll never regret cooking dried beans from scratch. Starting on Friday, March 27, 2026, I will be presenting a Heart-Healthy Weekend Supper Series. This series will run from this weekend through Memorial Day. Saturday’s meal will focus on Heart-Healthy Comfort meals. Sunday’s meal will focus on Heart-Healthy Meatless meals. Yes, this country gal is going to be trying out meatless meals.

Finally, a Prep Plan so that by doing a little prep work ahead of time, making your actual meal will be much easier.
Doing a little prep on Friday and Saturday makes Sunday dinner easy and relaxed. Many casseroles and soups actually taste better when made ahead, so don’t be afraid to assemble meals early and bake them the next day.
These recipes are focused on 2-3 servings. You may or may not have leftovers for the week ahead. Me, I’m planning to use them for my lunch!
