Ingredients
  

  • 1ยฝ pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 12 ounces penne pasta
  • 4 cups low-sodium chicken broth
  • 1 cup milk
  • 4 ounces reduced-fat cream cheese softened
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ยฝ teaspoon black pepper
  • ยผ teaspoon salt
  • 2 tablespoons chopped parsley optional

Method
 

  1. Heat the olive oil in a large Dutch oven or heavy stockpot over medium heat.
  2. Add the chicken and cook for 5โ€“6 minutes until lightly browned.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the chicken broth, milk, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a gentle boil.
  6. Stir in the penne pasta and reduce heat to a simmer.
  7. Cover and cook for 12โ€“15 minutes, stirring occasionally, until the pasta is tender.
  8. Stir in the cream cheese until completely melted and incorporated.
  9. Add the Parmesan cheese and stir until the sauce is smooth and creamy.
  10. Remove from heat and let stand for 3โ€“5 minutes to thicken slightly.
