Ingredients
  

  • 1 tbsp olive oil
  • 1 cup leftover smoked sausage sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 2 cans white beans drained
  • 4 cups low-sodium chicken broth
  • 2 cups spinach
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Method
 

  1. Heat olive oil in a large pot.
  2. Cook sausage and onion for 4–5 minutes.
  3. Add garlic and cook 30 seconds.
  4. Stir in tomatoes, beans, broth, and seasoning.
  5. Simmer 15 minutes.
  6. Stir in spinach until wilted.
  7. Serve hot.
