Where most people love to bake in the fall, in the summer or during the Christmas season, my favorite time to bake is in the spring. Iโm so inspired by the pretty pastels, in-season produce (hi, rhubarb!) and the lighter flavorsโa welcome respite after a long season of heavy winter meals. Finally, itโs time for all things carrot cake, strawberry, lemon poppyseed, banana and matcha, and donโt even get me started on the cute Easter treats and pretty green desserts for St. Patrickโs Day.
We hand-selected our very favorite spring desserts for this collection. Youโll find a few expected spring desserts, like banana pudding, lemon pie, carrot cake and strawberry-rhubarb cobbler, as theyโre quintessential to the season. But keep your mind open to some of our more trendy and modern spring desserts that are just as seasonal and pretty in their pastel hues, like pistachio cheesecake bars, carrot cake cinnamon rolls, Earl Grey tiramisu and the chicest rhubarb tart on the internet.
A few holidays land in spring, so there are a handful of St. Patrickโs Day and Easter desserts on the list. Donโt worry: Theyโre not so on-theme that you can make them only on the holiday; Shamrock Shake pie and peanut butter robinโs eggs are perfectly enjoyable any time from March through May. Many of these are make-ahead-friendlyโperfect if youโre going to a spring gatheringโbut please donโt feel as if you need any other excuse to make spring recipes than just welcoming in the season of newness.
