Ingredients
  

  • 1 lb smoked sausage sliced
  • 1 ยฝ lbs baby potatoes halved
  • 1 green bell pepper sliced
  • 1 small onion sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ยฝ tsp black pepper
  • ยฝ tsp salt
  • 1 tbsp chopped parsley

Method
 

  1. Heat olive oil in a large cast iron skillet over medium heat.
  2. Add potatoes and cook 12โ€“15 minutes until browned and tender.
  3. Add onion and peppers; cook 5 minutes.
  4. Stir in sausage and seasonings.
  5. Cook another 6โ€“8 minutes until sausage is browned.
  6. Sprinkle with parsley and serve hot.
