Ingredients
  

  • 1 lb chicken thighs diced
  • 1 cup long grain rice
  • 2 cups low sodium chicken broth
  • 1 cup frozen mixed vegetables
  • 1 small onion diced
  • 1 tbsp butter
  • 1 tsp garlic powder
  • ยฝ tsp thyme
  • ยฝ tsp black pepper
  • ยฝ tsp salt

Method
 

  1. Melt butter in a Dutch oven over medium heat.
  2. Cook chicken until lightly browned.
  3. Add onion and cook 3 minutes.
  4. Stir in rice, broth, vegetables, and seasonings.
  5. Bring to a simmer.
  6. Cover and cook 18โ€“20 minutes until rice is tender.
  7. Fluff and serve warm.
