Ingredients
  

  • pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cups baby potatoes halved
  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 small red onion sliced
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • Salt and pepper to taste
  • Fresh parsley chopped (optional garnish)

Method
 

  1. Preheat a grill or campfire cooking grate to medium heat.
  2. In a large bowl, combine the chicken, potatoes, zucchini, peppers, and onion.
  3. Drizzle with olive oil and sprinkle with ranch seasoning. Toss to coat evenly.
  4. Divide the mixture among four large sheets of heavy-duty aluminum foil.
  5. Fold and seal the packets tightly.
  6. Place packets on the grill or campfire grate.
  7. Cook for 25–30 minutes, turning once halfway through cooking.
  8. Carefully open the packets and check that the chicken has reached 165°F and the potatoes are tender.
  9. Garnish with parsley if desired and serve immediately.

Prep Ahead: Yes
Chop all vegetables and cut the chicken into bite-sized pieces at home. Store separately or assemble the packets completely and refrigerate in a cooler until ready to cook.
Freezer Friendly: Yes
The uncooked chicken and vegetable mixture can be assembled and frozen in freezer-safe bags for up to 2 months. Thaw in the refrigerator or cooler before placing into foil packets and cooking.
