Ingredients
  

  • 1 pound lean ground beef
  • 1 small onion diced
  • 1 packet taco seasoning
  • 1 cup uncooked long-grain rice
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 15-ounce can corn, drained
  • 2 cups beef broth
  • 1 cup shredded Mexican blend cheese
Optional toppings:
  • o Sour cream
  • o Sliced green onions
  • o Diced tomatoes
  • o Jalapeños
  • o Crushed tortilla chips

Method
 

  1. Heat a Dutch oven over medium heat on a campfire grate or camp stove.
  2. Brown the ground beef and onion until the beef is fully cooked.
  3. Drain excess grease if necessary.
  4. Stir in the taco seasoning.
  5. Add rice, diced tomatoes, corn, and beef broth.
  6. Bring to a simmer.
  7. Cover and cook for 18–20 minutes, stirring occasionally, until the rice is tender.
  8. Remove from heat and sprinkle with shredded cheese.
  9. Cover for 2–3 minutes until the cheese melts.
  10. Serve with desired toppings.
