Baked Lemon Chicken

Ingredients
  

  • 2 chicken breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/4 tsp salt optional
  • Lemon slices
Brown Rice
  • 1 cup brown rice
  • 2 cups water or broth

Method
 

  1. Preheat oven to 375°F.
  2. Mix olive oil, lemon juice, and seasonings.
  3. Place chicken in baking dish.
  4. Pour mixture over chicken.
  5. Top with lemon slices.
  6. Bake 25–30 minutes.
Brown Rice
  1. Simmer 40 minutes

Notes

Shortcut: Make rice ahead and reheat with a splash of water.
