Baked Spinach and Mushroom Ziti

Ingredients
  

  • 8 oz whole wheat ziti
  • 1 cup mushrooms sliced
  • 2 cups fresh spinach
  • 1 cup ricotta
  • 1 cup mozzarella
  • 1/2 cup grated parmesan
  • 2 cups marinara sauce
  • 1 egg
  • 1 tsp Italian seasoning

Method
 

  1. Cook pasta slightly underdone.
  2. Sauté mushrooms 5 minutes.
  3. Add spinach until wilted.
  4. Mix ricotta, egg, Italian seasoning.
  5. Combine pasta, veggies, sauce, ricotta mixture.
  6. Pour into baking dish.
  7. Top with mozzarella and parmesan.
  8. Bake at 375°F for 25–30 minutes.
