Ingredients
  

  • 1 package smoked sausage sliced into rounds
  • 1ยฝ pounds potatoes diced
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt
  • ยฝ teaspoon Italian seasoning
  • Optional: shredded cheddar cheese
  • Optional garnish: chopped parsley or green onions

Method
 

  1. Heat the olive oil in a large skillet or electric skillet over medium heat.
  2. Add the diced potatoes and cook for 10โ€“12 minutes, stirring occasionally, until they begin to soften and brown.
  3. Stir in the onions and bell peppers. Cook another 4โ€“5 minutes until vegetables begin to soften.
  4. Add the sliced smoked sausage and seasonings.
  5. Continue cooking for 8โ€“10 minutes, stirring occasionally, until the sausage is browned and the potatoes are fully tender.
  6. If desired, sprinkle shredded cheddar cheese over the top during the last 2 minutes of cooking.
