This is a simple meal that comes together easily and is perfect for a Saturday evening dinner.

Ingredients
  

  • 1 cup cooked brown rice
  • 1 cup cooked chicken breast diced
  • 1 cup mushrooms sliced
  • ยฝ cup onion chopped
  • 1 clove garlic minced
  • ยฝ cup low-sodium chicken broth
  • ยผ cup plain Greek yogurt
  • 1 tbsp olive oil
  • ยผ tsp thyme
  • ยผ tsp black pepper
  • 2 tbsp whole wheat breadcrumbs optional topping

Method
 

  1. Preheat oven to 375ยฐF.
  2. Cook mushrooms and onion in olive oil until soft.
  3. Add garlic and cook 1 minute.
  4. In a bowl combine:
  5. Cooked rice
  6. Chicken
  7. Mushroom mixture
  8. Broth
  9. Greek yogurt
  10. Thyme and pepper
  11. Pour into small baking dish.
  12. Sprinkle breadcrumbs on top.
  13. Bake 20โ€“25 minutes until hot and slightly golden.
