Method
- Preheat oven to 375ยฐF.
- Cook mushrooms and onion in olive oil until soft.
- Add garlic and cook 1 minute.
- In a bowl combine:
- Cooked rice
- Chicken
- Mushroom mixture
- Broth
- Greek yogurt
- Thyme and pepper
- Pour into small baking dish.
- Sprinkle breadcrumbs on top.
- Bake 20โ25 minutes until hot and slightly golden.
