Heart-Healthy Chicken & Rice Vegetable Bake

This Chicken & Rice Vegetable Bake is an easy comfort food casserole that’s warm, filling, and great for a weekend supper. It’s also a good way to use leftover chicken.

Ingredients

  • 1 cup cooked rice
  • 1 cup cooked chicken, diced or shredded
  • 1 cup frozen mixed vegetables
  • ½ cup chicken broth
  • ½ cup milk
  • 1 tbsp flour
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 1 tsp olive oil

Directions

  1. Preheat oven to 350°F.
  2. In a small saucepan, heat olive oil and stir in flour to make a paste.
  3. Slowly whisk in chicken broth and milk and cook until slightly thickened.
  4. In a bowl, combine cooked rice, chicken, and vegetables.
  5. Pour sauce over mixture and stir well.
  6. Pour into a small casserole dish (about 8×8 or 2-quart dish).
  7. Bake 30–35 minutes until hot and bubbly.
  8. Let sit 5–10 minutes before serving.

Serves about 3–4.
