Heart-Healthy Chicken & Rice Vegetable Bake
This Chicken & Rice Vegetable Bake is an easy comfort food casserole that’s warm, filling, and great for a weekend supper. It’s also a good way to use leftover chicken.
Ingredients
- 1 cup cooked rice
- 1 cup cooked chicken, diced or shredded
- 1 cup frozen mixed vegetables
- ½ cup chicken broth
- ½ cup milk
- 1 tbsp flour
- ½ tsp garlic powder
- ¼ tsp black pepper
- 1 tsp olive oil
Directions
- Preheat oven to 350°F.
- In a small saucepan, heat olive oil and stir in flour to make a paste.
- Slowly whisk in chicken broth and milk and cook until slightly thickened.
- In a bowl, combine cooked rice, chicken, and vegetables.
- Pour sauce over mixture and stir well.
- Pour into a small casserole dish (about 8×8 or 2-quart dish).
- Bake 30–35 minutes until hot and bubbly.
- Let sit 5–10 minutes before serving.
Serves about 3–4.
