This Stuffed Bell Pepper Casserole has all the flavors of stuffed peppers in an easy one-dish meal. It’s hearty, comforting, and perfect for a weekend supper.
Ingredients
- 1 cup cooked rice
- 1 cup cooked ground turkey or chicken
- 1 cup chopped bell peppers
- ½ onion, chopped
- 1 cup tomato sauce
- ½ cup chicken broth
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- Black pepper
- ½ cup shredded mozzarella (optional)
Directions
- Preheat oven to 350°F.
- In a skillet, cook onion and bell peppers until slightly soft.
- In a bowl, combine cooked rice, cooked turkey or chicken, vegetables, tomato sauce, broth, and seasonings.
- Pour into a small casserole dish (8×8 or 2-quart dish).
- Sprinkle cheese on top if using.
- Bake 30 minutes until hot and bubbly.
- Let sit 5–10 minutes before serving.
