Stuffed Bell Pepper Casserole

This Stuffed Bell Pepper Casserole has all the flavors of stuffed peppers in an easy one-dish meal. It’s hearty, comforting, and perfect for a weekend supper.

Ingredients

  • 1 cup cooked rice
  • 1 cup cooked ground turkey or chicken
  • 1 cup chopped bell peppers
  • ½ onion, chopped
  • 1 cup tomato sauce
  • ½ cup chicken broth
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Black pepper
  • ½ cup shredded mozzarella (optional)

Directions

  1. Preheat oven to 350°F.
  2. In a skillet, cook onion and bell peppers until slightly soft.
  3. In a bowl, combine cooked rice, cooked turkey or chicken, vegetables, tomato sauce, broth, and seasonings.
  4. Pour into a small casserole dish (8×8 or 2-quart dish).
  5. Sprinkle cheese on top if using.
  6. Bake 30 minutes until hot and bubbly.
  7. Let sit 5–10 minutes before serving.

Serves about 3-4
