Ingredients
  

  • 14 ounces smoked sausage sliced
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes drained
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: sliced green onions for garnish

Method
 

Camp Stove / Skillet Method
  1. Heat olive oil in a large deep skillet over medium heat.
  2. Add sausage slices and cook until lightly browned.
  3. Stir in onion and bell pepper. Cook until softened.
  4. Add garlic and cook 30 seconds.
  5. Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, and smoked paprika.
  6. Bring to a simmer.
  7. Cover and cook for 18โ€“20 minutes, or until rice is tender.
  8. Fluff rice and season with salt and pepper.
  9. Garnish with green onions if desired.

Notes

Slow Cooker Method
  1. Brown sausage in a skillet first for best flavor.
  2. Add all ingredients except rice to the slow cooker.
  3. Cook on LOW for 4โ€“5 hours.
  4. Stir in uncooked rice during the final 45 minutes.
  5. Cook until rice is tender.
Dutch Oven Campfire Method
  1. Cook sausage and vegetables in a Dutch oven over campfire coals.
  2. Stir in remaining ingredients.
  3. Cover and simmer over low coals for 20โ€“25 minutes.
  4. Stir occasionally to prevent sticking.
Campground Tips
  • Use pre-chopped frozen peppers and onions for easier prep.
  • Pre-slice sausage at home.
  • Store seasoning blend in a small zip-top bag.
Leftovers reheat beautifully the next day.
