Easy Campground Skillet Meal

Method
Camp Stove / Skillet Method
- Heat olive oil in a large deep skillet over medium heat.
- Add sausage slices and cook until lightly browned.
- Stir in onion and bell pepper. Cook until softened.
- Add garlic and cook 30 seconds.
- Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, and smoked paprika.
- Bring to a simmer.
- Cover and cook for 18โ20 minutes, or until rice is tender.
- Fluff rice and season with salt and pepper.
- Garnish with green onions if desired.
Notes
Slow Cooker Method
- Brown sausage in a skillet first for best flavor.
- Add all ingredients except rice to the slow cooker.
- Cook on LOW for 4โ5 hours.
- Stir in uncooked rice during the final 45 minutes.
- Cook until rice is tender.
- Cook sausage and vegetables in a Dutch oven over campfire coals.
- Stir in remaining ingredients.
- Cover and simmer over low coals for 20โ25 minutes.
- Stir occasionally to prevent sticking.
- Use pre-chopped frozen peppers and onions for easier prep.
- Pre-slice sausage at home.
- Store seasoning blend in a small zip-top bag.
