Ingredients
  

  • 1ยฝ pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small red onion diced
  • 1 can 15 ounces black beans, drained and rinsed
  • 1ยฝ cups corn kernels
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt
  • 1 cup shredded Mexican blend cheese
Optional Toppings
  • Chopped cilantro
  • Diced avocado
  • Sour cream
  • Lime wedges
  • Sliced jalapeรฑos

Method
 

  1. Preheat a grill to medium-high heat or prepare a campfire with a bed of hot coals.
  2. In a large bowl, combine the chicken, bell peppers, onion, black beans, and corn.
  3. Drizzle with olive oil.
  4. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, pepper, and salt. Toss until everything is evenly coated.
  5. Tear six large sheets of heavy-duty aluminum foil.
  6. Divide the chicken mixture evenly among the foil sheets.
  7. Fold and seal each packet tightly.
  8. Place the packets on the grill or over indirect campfire heat.
  9. Cook for 18โ€“22 minutes, turning once halfway through cooking.
  10. Carefully open the packets and check that the chicken has reached an internal temperature of 165ยฐF.
  11. Sprinkle each packet with shredded cheese.
  12. Close loosely for 1โ€“2 minutes until the cheese melts.
  13. Add desired toppings and serve directly from the packets.
