Ingredients
  

  • 8 cooked Italian turkey meatballs halved
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 6 cups low-sodium chicken broth
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 cup chopped zucchini
  • ½ cup small pasta ditalini, small shells, or elbow macaroni
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley optional
  • Grated Parmesan cheese for serving optional

Method
 

  1. Heat the olive oil in a Dutch oven or soup pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5–6 minutes until they begin to soften.
  3. Stir in the garlic and Italian seasoning and cook for 30 seconds.
  4. Add the chicken broth and diced tomatoes. Bring to a gentle boil.
  5. Stir in the pasta and cook according to the package directions until almost tender.
  6. Add the green beans, corn, zucchini, and halved turkey meatballs.
