  • 1 lb chicken thighs diced
  • 1 cup long grain rice
  • 2 cups low sodium chicken broth
  • 1 cup frozen mixed vegetables

  • ½ tsp thyme
  • ½ tsp black pepper
  • ½ tsp salt

Method
 

  1. Melt butter in a Dutch oven over medium heat.
  2. Cook chicken until lightly browned.
  3. Add onion and cook 3 minutes.
  4. Stir in rice, broth, vegetables, and seasonings.
  5. Bring to a simmer.
  6. Cover and cook 18–20 minutes until rice is tender.
  7. Fluff and serve warm.

  • 1 ½ lbs baby potatoes halved
  • 1 green bell pepper sliced

  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp chopped parsley

Method
 

  1. Heat olive oil in a large cast iron skillet over medium heat.
  2. Add potatoes and cook 12–15 minutes until browned and tender.
  3. Add onion and peppers; cook 5 minutes.
  4. Stir in sausage and seasonings.
  5. Cook another 6–8 minutes until sausage is browned.
  6. Sprinkle with parsley and serve hot.
