Ingredients
  

  • 2 cups prepared pulled pork
  • 4 whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/2 cup black beans drained and rinsed
Southwest Sauce
  • 1/3 cup plain nonfat Greek yogurt
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Pinch garlic powder

Method
 

  1. Step 1: Warm the Pork
  2. Heat pulled pork in a skillet or microwave until warm.
  3. Step 2: Make the Sauce
  4. In a small bowl, combine Greek yogurt, lime juice, chili powder, cumin, and garlic powder.
  5. Step 3: Assemble Wraps
  6. Lay tortillas flat and spread with southwest sauce.

  8. Fold in sides and roll tightly.
