Creamy Chicken & Vegetable Skillet
Ingredients
Method
- Heat olive oil in a large skillet over medium heat.
- Cook the onion, carrots, and mushrooms for about 5 minutes until they begin to soften.
- Add the broccoli and garlic and cook for another 2 minutes.
- Sprinkle the flour over the vegetables and stir well.
- Slowly whisk in the chicken broth until smooth.
- Simmer for 3–4 minutes until the sauce begins to thicken.
- Stir in the cooked chicken and peas.
- Remove the skillet from the heat and gently stir in the Greek yogurt.
- Season with thyme, parsley, salt, and pepper.
- Serve immediately over your favorite starch—or enjoy it just as it is.
