Ingredients
  

  • 1 package smoked sausage sliced into rounds
  • pounds potatoes diced
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • Optional: shredded cheddar cheese
  • Optional garnish: chopped parsley or green onions

Method
 

  1. Heat the olive oil in a large skillet or electric skillet over medium heat.
  2. Add the diced potatoes and cook for 10–12 minutes, stirring occasionally, until they begin to soften and brown.
  3. Stir in the onions and bell peppers. Cook another 4–5 minutes until vegetables begin to soften.
  4. Add the sliced smoked sausage and seasonings.
  5. Continue cooking for 8–10 minutes, stirring occasionally, until the sausage is browned and the potatoes are fully tender.
  6. If desired, sprinkle shredded cheddar cheese over the top during the last 2 minutes of cooking.
  7. Serve hot with your favorite cold summer side dish.
